Jimmy John’s has a cult-like following across many regions, but Austin, Texas was selected as the host city for a Valentine’s Day pop-up because of its unique combination of weather, demographics, and cultural fit. Austin’s thriving food scene, creative spirit, and strong affinity for the brand made it an ideal backdrop for a bold, exclusive activation. Yet, the challenge was steep: Jimmy John’s pop-up required a high-concept, immersive dining experience that elevated its identity beyond expectations.

Jimmy John’s asked RED VELVET to produce a three-day, invitation-only Valentine’s Day activation in Austin that would reframe the brand in a premium light. The goal was twofold: first, to create a meaningful, highly shareable dining experience that devoted fans and local influencers would never forget; and second, to deliver on Jimmy John’s quirky-yet-quality DNA while elevating it into a fine-dining context.
Jimmy John’s wanted an event that balanced authenticity with aspiration, offering guests a one-night-only glimpse into what it would feel like if their favorite sub shop became a chic, high-end French bistro.

We collaborated with Anomaly LA to design and produce Château Jé Jé: an elegant, French bistro-inspired pop-up that placed Jimmy John’s at the center of the experience. From the moment guests stepped inside, they were immersed in a whimsical yet refined environment: a custom sandwich wall photo moment, bow-tied waiters wearing salami boutonnieres, and a jazz trio serenading the room. We curated a four-course meal with playful nods to Jimmy John’s classics, complete with chips and cocktails, creating a stylish, unexpected dining journey that delighted fans and amplified the brand’s cultural presence.
